Shabu-shabu is a dish that thinly sliced beef is dipped in boiling water in a pan and eaten with a sauce. Eigikutei serves the choice of USDA prime or A5 Miyazaki Wagyu beef.

Kani Yosenabe Kaiseki Cuisine Course

Yosenabe is a combination of a hot pot in a Japanese style. Eigikutei serves crabs, Kani in Japanese, and various seasonal ingredients in the pot coming with small dishes.

Eigikutei’s sushi kaiseki course is an “Omakase” style meaning our chef serves sushi in front of all guests. So, this course is served at our counter seats and our sushi chefs take care of all the guests.

What is “Kaiseki” ?

Kaiseki is a style of traditional Japanese cuisine served in a series of small and intricate dishes. Kaiseki consists of three important elements.

  1. seasonal ingredients
  2. simple seasoning
  3. present it with hospitality

Kaiseki cuisine has been developed in Japan based on Sado, a Japanese tea manner. It originated from Wabi-Sabi, a kind of Japanese cultural spirit. Mostly, the Kaiseki dishes are small and simple, but each taste is established with very special and skilled techniques.

Japanese Hospitality, “OMOTENASHI”

Eigikutei focuses on the traditional Japanese style to serve both Japanese dishes and services in a perfect Japanese atmosphere. This is called ”Omotenashi” in Japanese, meaning hospitality focusing on perfect care for all guests. Also, our servers wear Kimono, a Japanese traditional dress, showing their hospitality to all guests.

Our Commitment to Ingredients with “UMAMI”

Eigikutei uses selected ingredients our chefs choose with their professional eyes. Our chefs control “UMAMI”, a source of tastes and flavors to create simple but deep dishes.

Some of the fish are imported from Japan directly. We also use seasonal live fish distributed locally. Regarding beef, we use A5 Miyazaki beef for shabu-shabu.

Every dish is harmonized with our dashi broth and UMAMI developed with our long-time experience and special techniques.

Japanese Sake and Wines Good for Kaiseki

Eigikutei offers a selection of Japanese Sake such as Junmai, Junmai Ginjo, and Junmai Daiginjo. These are known as popular sake and are served in many high-end restaurants not only in Japan but also all over the world.
Also, we select wines and sparkling wines that go well with Japanese cuisine. In our wine selection, we offer Japanese wine coming from Koshu Yamanashi Japan as well.

Eigikutei’s dining area consists of tables, booths, a sushi bar, and a Japanese sake bar.
At the bar counter, all guests can casually enjoy our popular Japanese sake.
Also, at the sushi counter, our sushi chefs serve omakase-style sushi while taking care of all guests.
