Eigikutei hosted an extraordinary collaboration with the Little Tokyo Business Association for the Yamagata Fair in LA, bringing the hidden gems of Japan’s Yamagata Prefecture right to our doorstep in Little Tokyo. This cultural and culinary celebration highlights the innovative spirit of Yamagata, blending tradition with modern flair. As part of this exciting event, Eigikutei is proud to host a special dinner featuring renowned Chef Yusuke Murayama—marking his first-ever appearance in the United States!

Yamagata Fiar Event with Chef Maruyama

Eigikutei hosted A Night in Yamagata on Monday, July 21, 2025. This farm-to-table dinner, prepared by Chef Yusuke Murayama of the acclaimed Restaurant Pas Mal, promises a fusion of traditional Japanese flavors and cutting-edge French techniques using seasonal Yamagata ingredients.

About Chef Yusuke Murayama

Chef Yusuke Maruyama

Born in 1977 in Sagae City, Yamagata Prefecture, Chef Murayama graduated from Yamagata Gakuin High School’s culinary program and honed his skills in restaurants across Yamagata and Tokyo. He opened his first spot at age 25 in Tendo City and relaunched Restaurant Pas Mal in Yamagata City in 2017. Known for his commitment to local sourcing and innovative dishes, he has earned prestigious accolades, including:

  • Selected as a Focus Chef in 2022 from a field of 550 restaurants nationwide.
  • Listed as a Top Three Great Restaurant in the 2023 Gault & Millau guide.
  • Featured on the Japan Times’ Top Ten Destination Restaurants List.
  • Bronze winner at the 14th Ministry of Agriculture, Forestry and Fisheries Chef Awards Program.

His cuisine is a harmonious blend of heritage and creativity, delighting gourmets and redefining fine dining in Japan.
